Sirloin Stroganoff

Ingredients

  • 1 lb sirloin steak

  • Sea salt, to taste

  • Black pepper, to taste

  • 3 tbsp flour of choice

  • 2-3 tbsp avocado oil

  • 1/2 onion, diced

  • 4 cloves garlic, minced

  • 10 oz mushrooms, sliced

  • 3/4 cup beef broth

  • 1/2 cup milk of choice (I used soy)

  • 1 tbsp soy sauce

  • 2 tbsp butter of choice

  • 1 tbsp nutritional yeast

  • 2 tsp apple cider vinegar

  • 1/4 tsp mustard

  • 2 tbsp fresh parsley, chopped, for serving

  • Pasta of choice

Instructions

  1. Cook pasta according to package directions.

  2. Prepare veggies- chop onions, mince garlic, slice mushrooms.

  3. Slice steak into bite-sized strips and season with salt and pepper. Add to bowl and toss with 1 tbsp flour until evenly coated.

  4. Heat avocado oil in pan on medium heat. Add sirloin and cook 2-3 minutes on each side until lightly browned. Set aside.

  5. Add more oil to the pan if needed. Saute the onion and garlic until onion is translucent. Add mushrooms and cook until softened.

  6. Stir in 2 tbsp flour until onion and mushroom mixture is evenly coated.

  7. Slowly whisk in broth, milk, soy sauce, butter, nutritional yeast, apple cider vinegar, and mustard. Stir until thickened and salt to taste.

  8. Add steak back to pan and simmer until fully cooked, stirring as needed.

  9. Serve over pasta and top with parsley. Enjoy!
